Homemade Buttercream Frosting without Powdered Sugar
Sugar free buttercream frosting without powdered sugar or artificial ingredients! Homemade, delicious and easy. Make amazing buttercream without confectioners sugar or any refined sugar at all!
I can't tell you how delicious this buttercream frosting is, with all natural ingredients the vanilla buttercream flavour is incredible!
It's also just the right texture for piping and holds up beautifully in or out of the fridge.
With only 4 ingredients, this buttercream frosting without sugar is based on a classic ermine frosting, also called boiled milk frosting, cooked flour frosting or roux frosting.
This is the traditional frosting used with red velvet cake. It tastes of vanilla (without any vanilla flavouring!) and the texture is so very light like a sweetened whipped cream.
Simply add the honey, flour and milk to your pan and whisk very thoroughly while cold until the flour is completely dissolved.
Continue to whisk while you heat it over a low heat for a few minutes, keep whisking all the time and don't leave it or it will catch suddenly (I have done this!).
When it's thickened into the roux, you'll see the texture in the video, then scrape it into a bowl and chill for about 30 minutes in the fridge until it's at room temperature.
Then give it a stir to make sure it's all smooth.
Next, whisk your butter for about 3 minutes until it becomes lighter and whiter in colour.
Then you add in your roux, a spoonful at a time and whisk in.
I added mine divided into about 5 spoonfuls. Keep whisking each spoonful in until it's completely combined, this avoids your buttercream splitting.
Smooth and light, vanilla-flavoured and delicious!
With only 10 minutes actual prepping and cooking, plus cooling, it's super easy to make.
We tested it and this buttercream frosting will even hold a little colouring!
This sugar free buttercream frosting holds its shape amazingly when piped, so you can pipe it as tall as you like.
This recipe makes enough to frost 12 cupcakes, or for 6 cupcakes if you pipe them as high as we did :) Hope you enjoy!

INGREDIENTS
- 25g flour
- 70g honey
- 100ml milk (dairy or oat)
- 100g butter at room temp
RECIPE METHOD
- Whisk together the flour, honey and milk
- Heat gently until thickened, whisking all the time so it doesn’t catch
- Allow to cool to room temperature, stir until smooth
- Whisk the butter for a few minutes until white, then add the thickened milk mixture a spoonful at a time, continuing to whisk until it all combines
- Chill for 30 minutes before piping
