No one will believe this creamy delicious frosting is dairy, gluten and sugar free!

If you don't need it to be gluten free, then plain white flour will work too.

I used Freee plain white flour for this recipe and it came out great.

First we cook the flour, oat milk and honey together to make the caramel sauce that will thicken our vegan butter.

Of course, you can use any non-dairy milk you choose, I just love oat milk.

To make this 100% vegan, you could use carob fruit syrup instead.

Chill the caramel sauce for about 30 minutes until it's room temperature, then give it another good stir to make sure there are no lumps.

Whisk your room temperature dairy free butter for about 3 minutes, until it's lighter in colour. I used Flora unsalted plant butter.

Is your block of butter too cold to whisk? Just microwave for 15 seconds and it should whisk nicely.

At this point you can add a couple of drops of food colouring if you like, whisk in thoroughly too.

Here's where we need to be a little bit patient!

Whisk in only 1 spoon of the caramel at a time, making sure it's completely whisked in before you add the next one, or you risk curdling.

Then you'll end up with a smooth dairy free buttercream. Smooth out any bubbles with a spoon if needed.

If it looks like the frosting has split, this means the vegan butter was too cold. Just microwave for 15 seconds and whisk again, it will all combine back together.

This dairy free frosting has a beautiful vanilla flavour, thanks to the honey, and it's not overpoweringly sweet so you can pipe it high!

This recipe makes enough frosting for 12 cupcakes as shown.

They are best eaten within 2 days, stored in the fridge and served at room temperature.

INGREDIENTS

  • 125g vegan butter (room temperature)
  • 25g gluten free flour
  • 100 ml oat milk
  • 100g honey

RECIPE METHOD

  • Whisk flour into the milk and honey, heat gently, whisking continually until thick
  • Chill for 30 minutes
  • Whisk vegan butter until lighter in colour, about 3 minutes
  • Add in the caramel flour mixture, one spoonful at a time, whisking until completely combined
