This recipe was adapted from the Delia Smith version, which uses white sugar.
I love this version too because it doesn't involve separating the eggs.
The cornflour incorporates easily because you start whisking the mixture from cold, and keep whisking as it heats to avoid catching.
Using cornflour to thicken also means this recipe is gluten-free.
The result is a beautiful, zesty, thick lemon curd, with no refined sugars.
This recipe makes 1 small jar, about 300 grams.
It will happily keep in the fridge for a few weeks, or if you'd like to preserve it for longer by canning, then sterilise the jar first by washing in hot soapy water, rinse well then microwave for 45 seconds until dry. Sterilise the lid in boiling water.
This lemon curd is great spread on toast for breakfast, or used as a filling for sugar free lemon cake, or spread as a topping on cheesecake!

INGREDIENTS
- 1 Lemon
- 1 Egg
- 70g Honey
- 55g Butter
- 1 tsp Cornflour
RECIPE METHOD
- Zest and juice the lemon
- Add egg to pan, whisk and add the lemon zest, juice, cornflour, butter and honey
- Whisk while heating gently over a medium-low heat for 8 minutes until thickened
- Reduce the heat to minimum and continue to whisk for 1 minute
- Remove from heat and pour into a jar
