Gluten Free Dairy Free Sugar Free Cupcakes Recipe

These honey cupcakes are so simple, being gluten free, egg free, dairy free and refined sugar free they are an easy option when providing for allergies and intolerances!
Since we don't use eggs in this recipe, for a good rise enter baking soda (bicarbonate of soda) - much stronger than baking powder, it just needs a little acid to activate, so we add a tsp of vinegar - don't worry you can't taste it at all in the final cupcake!
The batter will seem quite liquid - don't worry these cupcakes will bake and set with no problems.
This recipe provides 12 cupcakes at 160 calories each without frosting.
The texture is light and fluffy with a delicious vanilla flavour - thanks to the honey!
They come out a beautiful golden colour, allow to cool for about 30 minutes before frosting.

INGREDIENTS
- 225g Gluten free flour
- 1 tsp Baking soda
- 150g Honey
- 5 tbsp Vegetable oil
- 1 tsp White wine vinegar
- 6 tbsp Water
RECIPE METHOD
- Preheat oven to gas mark 5 (190c / 375F)
- Whisk honey, oil, water and vinegar together
- Add flour and baking soda, mix very thoroughly
- Scrape into cupcake moulds, bake for 20 minutes until firm to the touch
