This keto broccoli bake is a great staple recipe for a side dish or a vegetarian main course.
Creamy broccoli bake is a super comfort food we all love! This keto version uses cream cheese to thicken the cheese sauce, rather than flour.
I usually steam the broccoli whole. Cut off the long part of the stalk so that it will sit upright in the pan and pour in the water so it's about 2 cm deep.
Simmer for 10 minutes until you can easily push a knife into the centre. Once it's cooked, cut it up into florets and finely chop the cooked stalk.
While the broccoli is cooking, make the cheese sauce. Save half of the grated cheese for the topping.
I mix everything in a bowl then blast it in the microwave until it just melts enough to combine properly.
Then add your chopped cooked broccoli and stir until everything is coated.
Tip into an overproof dish and top with the rest of the grated cheese.
Bake for 20 minutes until the cheese is melted and bubbling and slightly browned.
Serve immediately, or this will keep well in the fridge for 3 days.

INGREDIENTS
- 1 steamed Broccoli
- 165g Cream cheese
- 150g Cheddar cheese (grated)
- 100ml Milk
- 1/2 tsp Garlic Powder
- 1/4 tsp Black pepper
RECIPE METHOD
- Steam the broccoli
- Add the cream cheese, milk, half of the grated cheddar cheese, garlic powder and black pepper to bowl and whisk together
- Heat in the microwave for 2 minutes or over a low heat until the cheddar cheese has melted enough to combine into the cheese sauce
- Add the chopped broccoli and pour into an overproof dish, scatter with the rest of the grated cheese and bake for 20 minutes at Gas mark 8 (230c / 450F) until the cheese is melted and slightly browned
