Sugar-free no-bake breakfast bar recipe! Filled with oats nuts seeds and sultanas, quick breakfast bar to keep healthy on the go.
These easy sugar free breakfast bars are endlessly adaptable and healthy. As long as you stick to the basic ratios these bars will work successfully and they are a doddle to make.
Look for sugar free peanut butter - lots of brands now make peanut butter that is 100% peanuts. Cocoa butter is a healthy fat and easy to buy online, not so expensive and lasts for ages. You can also use it to make sugar free dark chocolate!
You can melt the cocoa butter, honey and peanut butter over the hob on a very low heat, or it's just as quick to use the microwave. I usually blast the base mix for 1 minute, stir then another 30 seconds usually does it. I like to use cocoa butter because at room temperature it is nicely set and firm so that these breakfast bars will hold together without baking. You can substitute with coconut oil, the taste is delicious but you'll need to keep them in the fridge.
This time for the seed mix I used pumpkin seeds and chia seeds, and for the chopped nuts I used a mix of peanuts, almonds and walnuts. For the dried fruit I use sultanas but you could sub with dried cranberries or chopped dates are delicious. I had sugar-free muesli in mind for these bars but they are also great made with plain oats. Or if you need gluten free sugar free breakfast bars, sub with gluten free muesli if you can't eat oats.
Stir the mix together thoroughly, and prepare a dish lined with baking paper, press into the dish making sure to fill the corners and smooth the top.
Chill for about 1 hour, it's usually plenty for the breakfast bars to set firmly enough to cut.
Cut into 4 for a 350 kcal sugar free breakfast bar, or into 3 for a 466 kcal no sugar breakfast bar!
These refined sugar free oat bars will easily keep for a week in the fridge.

INGREDIENTS
- 40g cocoa butter
- 30g honey
- 30g peanut butter
- 40g mixed nuts
- 40g mixed seeds
- 40g muesli or oats
- 40g sultanas
RECIPE METHOD
- Add cocoa butter, honey and peanut butter to a heat proof bowl, microwave in 30 second blasts until melted, stir together
- Add your choice of muesli or oats, nuts, seeds and sultanas
- Combine thoroughly and press into a lined tray, mine is about 12 cm x 20 cm
- Chill for 1 hour until firm enough to cut
