Sauté your vegetables until only just tender but still with some crunch - I used spring onions and bell peppers but you can add / sub with onion and garlic.
Drain your pasta, reserving 2 tablespoons of the cooking water. Stir the pasta, pesto and reserved water into the vegetables.
Gently fold in the tuna so it doesn't break up too much, keeping the chunks.
Sprinkle with salt and pepper, and grated parmesan or cheddar cheese if using, and serve hot.

INGREDIENTS
- 200g Uncooked Pasta
- 75g Spring Onions
- 2 Bell Peppers (240g)
- 1 tbsp Olive oil
- 2 tins Tuna (200g drained)
- 70g Pesto
- Salt
- Pepper
RECIPE METHOD
- Boil pasta according to instructions
- Meanwhile, sauté spring onions and peppers in olive oil until lightly charred but still firm
- Reserve the pasta water, stir in the pasta, pesto and 2 tbsp of the pasta water, add the tuna and season to taste
