INGREDIENTS
- 1 kg minced steak
- 1.2 kg fresh tomatoes
- 400g plum tomatoes
- 2 large onions
- 4 cloves garlic
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 1 tbsp dried marjoram
- 3 tsp salt
- 3 tsp black pepper
- 4 bay leaves
- 1 tsp nutmeg
- 1 tbsp paprika
- 1 tsp stevia
- 1 tbsp garlic granules
- 750 ml red Italian wine
- (eg. Primitivo)
- 90 g fresh basil
- 2 tbsp tomato puree
RECIPE METHOD
- Sauté beef mince in olive oil until browned all over, breaking up lumps, then drain off any liquid
- Sauté onions and garlic, add to beef, stir in wine, tomatoes, oregano, marjoram, bay leaves, nutmeg, paprika, stevia, dried garlic, salt and pepper
- Bring to a simmer, reduce heat and simmer covered over a low heat for 30 minutes, stirring every 10 minutes
- Remove the lid and add the tomato puree and basil
- Now is a good time to start off cooking the pasta
- Continue to simmer sauce uncovered for 30 minutes
- Stir in a large spoonful/0
- 5cups/150ml of the pasta water at the end, and serve spooned over hot pasta, sprinkled with parmesan
