First cream together the butter and honey, then whisk in the eggs and stir in the flours to form a soft dough.

INGREDIENTS

  • 110g Butter
  • 100g Honey
  • 1 Egg
  • 180g Plain Flour (gluten free if needed)
  • 70g Ground Almonds
  • 100g Sugar Free Dark Chocolate

RECIPE METHOD

  • Cream the softened butter and honey together, whisk in the egg
  • Stir in the flour and almond flour, then fold in the chocolate chips
  • Take a dessertspoonful of mixture and spoon onto a baking tray lined with baking paper
  • Bake in batches at gas mark 5 (190c/375F) for 13-15 minutes until very lightly browned
  • Lift onto a cooling rack with a spatula and allow to cool
