These easy banana muffins are soft, moist, light and fluffy thanks to using vegetable oil rather than butter in this recipe.
Many moist muffin recipes use other extra ingredients like yogurt or sour cream but this recipe is plenty moist enough using the oil and the ripe banana.
Use the ripest banana you can find - the softer the better!
They rise well and have a lovely golden brown top when baked, even though they contain no refined sugar. The vanilla extract really complements the banana flavour too.
Whisk together all the wet ingredients first, the mashed banana, oil, eggs, vanilla extract and honey, then fold in the flour.
Spoon into your muffin tray and decorate with thin slices of banana if you like.
These no sugar muffins come out a lovely golden brown on top, with soft light fluffy and moist insides.

INGREDIENTS
- 1 mashed ripe Banana (100g)
- 70 g Honey (3 tbsp)
- 2 Eggs
- 75 ml Vegetable oil (1/3 cup)
- 150 g Self-Raising Flour (1.25 cups)
- 1 tsp Vanilla Extract
- 1/2 Banana to decorate (optional)
RECIPE METHOD
- Preheat oven to gas mark 5 (190c / 375F)
- Add eggs, honey, vanilla extract, oil and mashed banana to bowl, whisk thoroughly
- Fold in the flour, combine then spoon into muffin tin
- Bake for 30 - 35 minutes until golden brown, allow to cool before serving
