Sugar Free Blueberry Jam Recipe
Delicious easy sugar free blueberry jam recipe - healthy and versatile! Smother on toast, pancakes, sandwiches or cheesecakes for a no sugar option.
I regularly make this easy no sugar jam recipe, usually I use it for a simple snack or breakfast, spread generously on toast.
It's so straightforward to make, and the apple juice adds slightly more sweetness to the blueberries.
We gently heat the apple juice first to reduce it by about half, this only takes about 5 minutes.
Then we simmer the blueberries for about 30 minutes, releasing the beautiful juice and intensifying the flavours.
There is no need to mash, they will just fall apart as they gently cook.
A pot of blueberries simmering away is so comforting.
Keep stirring every few minutes, watching that they don't catch, and soon they will reduce into a delicious dark red-purple sauce.
Continue to cook until the consistency has thickened enough so that you can run a wooden spoon along the bottom of the pan and it will stay there a few moments.
Your blueberry jam will thicken up even more once it's cooled.
This easy recipe makes around 300 grams of jam.
Absolutely delicious spread on toast on top of cream cheese or butter.
It can be used in many ways!
Dolloped on sugar free pancakes.
Cheddar cheese and jam sandwiches.
Topping for a healthy cheesecake.
Classic no sugar scones with clotted cream.

It will happily keep in the fridge for up to 2 weeks.

INGREDIENTS
- 500g (2 ⅔ cups) Blueberries
- 150 ml (⅔ cup) Apple juice
RECIPE METHOD
- Simmer the apple juice for about 5 minutes until reduced by half
- Add the blueberries and continue to simmer for about 30 minutes until thickened
- Allow to cool before serving or using
