Sugar Free Blueberry Muffins Recipe

I kept this no sugar blueberry muffin recipe as simple as possible because these are meant to be a quick and easy healthy treat!
Many diabetics can tolerate honey in moderation and you can make them even more healthy by baking them with self-raising wholemeal flour, but I used self-raising all purpose flour this time which turned out super light and fluffy!
First melt the butter a little, it doesn't have to be completely liquid, I usually do this for about 45 seconds in the microwave, so it softens enough to stir in the honey. This recipe should also work with maple syrup or agave syrup if you prefer these options.
Then add the eggs and whisk thoroughly until completely combined.
Fold in the self-raising flour, you can sift the flour if you like at this point.
Then add your fresh blueberries, gently folding into the sugar free batter so they don't pop!
Carefully spoon into a non-stick muffin tray or a muffin tin lined with paper muffin cases. This recipe makes 6 blueberry muffins, the perfect size for an afternoon snack with a coffee.
I love how the blueberries on top of the muffins ooze syrup when they have finished baking! Push a few extra into the tops before you bake them for this effect :)
The smell is beautiful and the blueberries are still so juicy.
These refined sugar free muffins are sweet and pretty enough from the blueberries and honey, but you could sprinkle with a little stevia powder for extra decoration!

INGREDIENTS
- 100g softened butter
- 70g honey
- 2 eggs
- 130g self-raising flour
- 100g blueberries
- 1 tsp vanilla extract
RECIPE METHOD
- Pre-heat oven to Gas mark 5 (190c / 375F)
- Mix butter, honey and vanilla extract, whisk in the eggs
- Fold in flour, combining well then gently fold in the blueberries
- Spoon into a muffin tray, bake for 20-22 minutes, until a skewer comes out clean
- When cool, remove from muffin tray and serve
