These delicious muffins have a fluffy light crumb, yet they are filling and substantial thanks to the oats and walnuts.
All the natural sweetness comes from the bananas, sultanas and cinnamon. No refined sugars here!
Make sure the bananas are completely mashed so they distribute well through the mixture.
You could swap out the walnuts for any other chopped nuts, pecans would be delicious too!
If you don't have sultanas, you can swap these out for raisins, dried blueberries or dried cranberries.
To make these breakfast muffins even more healthy, you can use wholemeal self-raising flour instead.
The result is a muffin with a soft crumb and a subtle caramel sweetness. The chopped walnuts add even more texture.
These muffins will happily keep for 5 days. Allow to cool, then store in an airtight container.

INGREDIENTS
- 50g self-raising flour
- 50g rolled oats
- 100g sultanas
- 50g walnuts
- 2 bananas
- 40g vegetable oil
- 50g yogurt
- 1 egg
- 1 tsp baking soda
- 1 tsp cinnamon
RECIPE METHOD
- Stir together the whisked egg, mashed banana, yogurt and oil until fully combined
- Add the sultanas, walnuts and cinnamon, stir again
- Finally stir in the flour, oats and baking soda thoroughly and divide into 8 muffin cases
- Bake for 30 minutes on gas mark 5 (190c/375F)
