Dairy Free Sugar Free Gluten Free Coconut Cookies Recipe
Making delicious sugar free coconut cookies with just 3 simple ingredients is quick and easy. Gluten free, dairy free and egg free too!
These tasty coconut cookies are so simple and quick to make.
At only 90 calories each they are a great snack to have on hand.
Use a ripe banana, the riper the better! I also added just 1 teaspoon of stevia powder to enhance the sweetness, this goes great with the toasted coconut flavours.
If you don't have stevia, you can substitute with a teaspoon of honey or maple syrup.
Thoroughly mash the banana and mix in the coconut flakes and stevia.
You'll end up with a sticky dough, spoon onto a lined baking sheet and press into circles about half a centimetre thick.
Bake for 15 minutes in a preheated oven. They're done when the edges are lightly toasted golden brown.
Allow to cool on a rack on before eating, they will be very soft at first so don't try to pick them up until cooled.
Optionally, once cooled you can decorate with melted sugar free chocolate or 100% dark chocolate, the toasted coconut flavours go perfectly with chocolate!

INGREDIENTS
- 1 mashed Banana (90g)
- 60g (2/3 cup) Coconut flakes (desiccated coconut)
- 1 tsp Stevia powder
- Optional: 100% Dark chocolate to decorate
RECIPE METHOD
- Preheat oven to Gas mark 7 (220c / 425F)
- Blend the coconut flakes for a few seconds
- Add the mashed banana and stevia, mix thoroughly
- Spoon onto baking sheet lined with baking paper and bake for 15 minutes
- Allow to cool before eating/decorating
