Sugar Free Cake Frosting

This really is the sugar free chocolate icing on the cake! We came up with this chocolate frosting recipe without confectioners sugar before we'd even perfected the sugar free chocolate cake recipe. This icing recipe uses honey, no powdered sugar so it's great for a healthy diet and for diabetics.
The base of this frosting is double cream or heavy cream, it can easily be piped onto cakes or spread on with a knife.
First add all your ingredients to a large bowl, no need to melt anything as it will combine very easily.
We've used a teaspoon of sugar free vanilla essence to add depth of flavour to the chocolate frosting.
Using honey in the sugar free chocolate icing is healthier for diabetics too, as most frosting recipes use confectioners sugar or powdered sugar.
The optional sugar free chocolate sauce is one I found in the UK that uses all natural ingredients, it's made from carob and apple. Here's a link if you'd like to buy it on eBay, it's made in the UK but they will ship worldwide.
Whisk your frosting until it's thick enough to hold it's shape, this sugar free icing can be piped onto your cake using a piping bag or spread thickly with a knife.
You might think it won't hold up without powdered sugar or confectioners sugar but it still holds up beautifully and can be piped easily.
Strictly speaking, this chocolate frosting without refined powdered sugar is actually close to a sugar free chocolate ganache :)

INGREDIENTS
- 600ml Double Cream
- 40 grams Cocoa Powder
- 2 teaspoons Vanilla Extract
- 5 teaspoons Honey
- 4 teaspoons Sugar Free Chocolate Sauce (optional)
RECIPE METHOD
- Add all the ingredients to the double cream, then whisk by hand or with an electric whisk until very thick
- Spread your frosting all over your sugar free chocolate cake
