INGREDIENTS
- 115g (½ cup or 4oz) melted butter
- 100g (1/4 cup or 3.5 oz) honey
- 1 egg
- 250g (1½ cups + 1 tbsp or 9oz) plain flour
- 0.5 tsp baking powder
- 1 tbsp ginger powder
- Pinch salt
- 1 tbsp grated fresh ginger
RECIPE METHOD
- Pre-heat oven to gas mark 6 / 200 degrees celcius (380F)
- Add butter, honey, egg and fresh ginger to a bowl and stir thoroughly
- Pour in the flour, baking powder, ginger powder and salt, stir to combine into a soft dough
- Divide into 12 balls, pressing down to about 1 cm thick
- Bake for 15 minutes, allow to cool before serving
