INGREDIENTS
- 2 Vanilla Pods
- 600ml Double Cream
- 200ml Milk
- 6 Egg Yolks
- 1 Tablespoon Ground Almonds
- 3 Tablespoons Honey
- Salt
RECIPE METHOD
- Pour the double cream and milk into a saucepan, add the ground almonds and stir until combined
- Use a sharp knife to split the vanilla pods lengthways and carefully scrape everything inside the pods into the saucepan, also add the empty vanilla pods to float in the liquid and infuse their flavour
- Bring everything to a low boil, stirring constantly, when you see the edges start to bubble, take off the heat and allow to cool for around 30 minutes - stir every now and again to prevent the mixture from forming a skin
- Separate the egg yolks from the whites and place the yolks in a mixing bowl (Keep the egg whites in the fridge as they can be used for other recipes) Add the honey and a tiny pinch of salt to the yolks, just to enhance the flavour
- Use an electric whisk to beat the mixture together until fully combined and pale in colour - this should only take a couple of minutes
- Use a regular hand whisk to slowly pour and whisk the egg mixture into the cooled cream mixture in the saucepan
- Heat on low and stir regularly until the mixture thickens, about 8-10 minutes, do not allow it to boil
- As soon as you see any signs of it approaching the boil, remove it from the heat and pour into a container, closing it with an airtight lid, allow the mixture to cool, then as soon as you can, place in the freezer
- Remove from the freezer and stir every hour, about three or four times, before leaving it in the freezer overnight
