Sugar Free Sweet and Sour Chicken with Pineapple

With this sweet and sour chicken recipe, you can have healthy Chinese takeaway any time that is much more nutritious and much cheaper, but still just as delicious!
When you think of Chinese food, there is no more iconic combination than sweet and sour chicken with pineapple! We like to use fresh ripe pineapple because it's so juicy and soft! If you substitute with tinned pineapple, look for pineapple in juice only, without added sugar.
While some soy sauce has added sugar, there are plenty of brands that don't use use sugar, just check the ingredients list. We usually use Kikkoman as most of their sauces don't have any added sugar.
If you like the sauce to be a bit thicker, add another tablespoon of cornflour into 2 tablespoons of water and stir in towards the end of cooking.
Serve with boiled rice and optionally garnish with green (spring) onion.

INGREDIENTS
- 500g Chicken Breast - diced
- 1 Ripe Pineapple or 1 tin of pineapple in juice
- 1 Tablespoons White Wine Vinegar
- 1cm Fresh Ginger - grated
- 2 Cloves Garlic - minced
- 1 Green Pepper
- 1 Red Pepper
- 1 Onion
- 1 Tablespoon Tomato Purée
- 1 Tablespoon Honey
- 1 teaspoon Chilli Flakes
- 1 Tablespoon Cornflour
- 1 Tablespoon soy sauce
- Salt
RECIPE METHOD
- Remove skin and core from pineapple, dice into chunks - juice half the pineapple using a blender then sieve the pineapple
- Combine juice, cornflour, vinegar, ginger, garlic, tomato paste, soy sauce, honey and chilli flakes
- Season and stir fry the chicken in a little oil until golden, remove from the pan then fry the peppers and onions
- Add the chicken and sauce back to the pan, continue cooking until the chicken is cooked through, serve with white rice

A great variant is to put hoisin sauce over the top and then cook it. Awesome!
